Roasted Root Veggies, Kohlrabi and Garlic Scapes
Preheat oven to 375 degrees. Peel kohlrabi (optional). Dice as many root veggies and kohlrabi as you want to eat, coat with olive oil and lightly salt. Mix in 2 inch chopped garlic scapes. Place in the over for 35 minutes flipping halfway through, leave in another 5-10 minutes for extra roast. Meanwhile chop leaves of root vegetables and kohlrabi and lightly steam or saute with a little olive oil for only 1 or 2 minutes. When the veggies are done, mix with cooked leaves or lay them over a bed of greens. Add chopped parley, oregano, chives, or cilantro as topping!

Use all the garlic scape! The tail gets a little stringy but you can still eat that little bulb at the top. You can use garlic scapes in any recipe just like you would the root garlic bulb.
