Skillet Lima Beans

1/2 large onion

5-10 crimini mushrooms (baby portabellos)

1 bunch of kale

1 cup cooked lima beans

1 teaspoon cumin

1 teaspoon smoked paprika

Refer back to Week 18 recipes for how to soak and cook dried beans. Saute half diced onion with 2 tablespoons olive oil for 2-3 minutes or until translucent. Add in sliced mushrooms and cook another 3-5 minutes until tender. Throw in cooked beans and torn kale with salt, pepper, cumin and paprika. Cover with lid and let kale wilt. Uncover and stir for a couple more minutes. Serve hot.

 

Roasted Curry Daikon Radish

2 daikon radishes cut into 1/2′ pieces

3 tablespoons olive oil

1 tablespoon curry powder

1 teaspoon salt

1/2 teaspoon granulated garlic

1/4 teaspoon granulated onion

1/8 teaspoon lemon juice

chipped parsley and green onion for garnish

Preheat oven to 400 degrees. Combine all ingredients in a medium bowl until the radish is well coated. Let sit for 15 minutes Arrange radish pieces in a single layer on a cookie on a sheet; bake for 25-30 minutes or until golden brown, Flip once during baking time. Garnish with parsley & green onion.
