Baked Yellow Squash Recipe

Ingredients:

  • 3 pounds yellow summer squash, cut into 1-inch cubes (about 5-6 squash)
  • ½ cup dry bread crumbs
  • ½ cup chopped onion
  • 2 large eggs eggs
  • ¼ cup butter, melted
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup butter, melted
  • ¼ cup dry bread crumbs

Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.

Place the squash in a large saucepan, cover with water, and boil until soft, about 15 minutes. Drain the squash well, place in a large mixing bowl, and mash until slightly chunky. Stir in 1/2 cup of bread crumbs, onion, eggs, 1/4 cup of butter, sugar, salt, and pepper until thoroughly combined, and spread mixture into the prepared baking dish. Drizzle the top of the casserole with 1/4 cup melted butter, and sprinkle 1/4 cup bread crumbs over the butter.

Bake in the preheated oven until the casserole is cooked through and the top is golden brown, about 1 hour. (Original Recipe)

Breakfast Burrito Recipe

Salsa Ingredients:

  • 1 large avocado, peeled, pitted, and diced (optional)
  • 1/2 cup diced seeded tomatoes (1 to 2 tomatoes)
  • 2 tablespoons minced shallot or onion
  • 1 clove garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 cup fresh chopped cilantro

Burrito Ingredients:

  • 4 large eggs
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/2 lb spicy sausage (or regular sausage), removed from casings
  • 1-1/3 cups (6 oz) shredded cheese
  • 4 (10-in) burrito-size flour tortillas
  • Vegetable oil or olive oil

Place all of the salsa ingredients in a medium bowl and mix to combine. Set aside.

In a medium bowl, whisk the eggs with the smoked paprika and salt. Set aside.

Heat a large nonstick pan over medium-high heat. Add the sausage and cook, stirring frequently, until browned, 4 to 5 minutes. Use a slotted spoon to transfer the sausage from the pan to a plate, leaving the drippings in the pan. Reduce the heat to low. Add the eggs and scramble until just cooked through. Transfer the eggs to a plate. Clean the pan (you’ll use it again).

Assemble the burritos: Spoon about 1/4 cup of the avocado-salsa onto each tortilla (you’ll have a little leftover salsa; that’s for the cook!), followed by a quarter of the sausage, a quarter of the eggs, and 1/3 cup cheese. Fold in the sides of the tortilla over the filling and roll, tucking in the edges as you go.

Lightly coat the pan with oil and set over medium heat. When the pan is hot, add the burritos, seam side down. Cook, covered until the bottom of the burritos are golden brown, about 3 minutes.
