Fried Sweet Peppers with Balsamic Vinegar

Ingredients: (Double ingredients if desired)

  • 3 Sweet Peppers
  • 3 Tbsp Extra Virgin Olive Oil
  • 1 Garlic Cloves, Peeled & Minced
  • 3 Tbsp Balsamic Vinegar
  • Salt & Pepper
  • 3 Tbsp Cup Fresh Chopped Parsley

Wash and dry the peppers, then remove the seeds, stems, and membranes. Cut the peppers into strips.

Heat the oil in a large heavy-bottomed skillet and add the peppers, stirring well to coat in the oil.

Cook the peppers over medium heat until they begin to soften and brown, stirring often, about 8 minutes.

Add the garlic and cook another minute or two until fragrant.

Add the balsamic vinegar, season with salt and pepper, and mix well.

Cook another 3 to 4 minutes until the peppers have absorbed all of the vinegar.

Toss with the fresh chopped parsley and place it on a platter to serve. (Original Recipe)

 

Corn and Onion Side Dish Recipe

Ingredients:

  • 4 ears fresh corn
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1 pinch salt and pepper to taste

Cut corn kernels from the cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper. Enjoy warm or cold. (Original Recipe)
