We are replacing the loose leaf lettuce this week with heads of escarole. 

We have them hiding is the grass so the deer won’t find them!  Haha,  actually we transplanted them from the greenhouse and never bothered to weed them.  But they still look nice, planted right next to our red romaine also in tomorrow’s share…

If you are unsure what to do with escarole, it is versatile.

You can enjoy it raw or cook with it; braise, grill, or sauté escarole. Tear it into pieces and add to soups.  Dress raw leaves with a garlicky vinaigrette or pair leaves with a creamy dip.  The inner leaves are best for raw preparations and the outer leaves are best reserved for cooking.
