Want to soak up the last taste of cucumber this season? Grab an actual cucumber or some borage! Borage, also known as starflower, is a medicinal herb that actually has edible leaves and flowers. Bees absolutely love borage and its flowers have a subtle honey-like flavor.

Cutting Instructions: Please do not cut the entire plant. Only snip off a few individual leaves. Flowers are best picked before they are open. Please sample the flowers and do not pick all the flowers, since our honeybees like them too!

Cucumber Borage Salad

Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lime juice
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 cucumber – halved, seeded, and sliced
  • 6 small borage leaves

Combine olive oil, lime juice, salt, and pepper in a bowl and stir together. Add sliced cucumber, cover, and refrigerate for 1 hour. Sprinkle with borage leaves and a few borage flowers just before serving, as the flowers wilt quickly.
