A beautiful sunny week gave us opportunity to catch up with spring cleaning and getting some more plants into the ground. We planted 3 varieties of sweet potatoes, melons, winter squash and brussels sprouts that you will be able to enjoy later this season. We have been very pleased with our new strawberry patch this season. With last weeks abundance we were able to share them with independent businesses around the Lehigh Valley. They have been very well received! The strawberries are still going strong this week, and may keep up for a couple more if we are lucky.  The spring sunshine is granting us plenty of veggies for your weekly CSA.

Here is the list of what to expect:

Strawberries

Snow Peas

Sugar Snap Peas

Lettuce Mix

Red Beets

Garlic Scapes

Cabbage

Radish

Kale

PYO Herbs: Cilantro, Parsley, Chives, Sage, Oregano, Thyme

PYO Flowers: Poppies, Delphinium, Phlox, maybe 1 or two others

New for this week is cabbage and sugar snap peas.
Cabbage can be shredded into a fresh salad or slaw. It can be sauted, baked or boiled, or made into a casserole or soup. Goes well with potatoes, noodles, sausage, kielbasi, bacon and more.
We also are adding snap peas, which are crunchy sweet peas perfect for snacking or as an addition to a meal. They are great for eating raw, in a stir fry or baking. They can also be used interchangeably with snow peas in a recipe. Coming up soon is shelling peas!

We have lots of garlic scapes still shooting up. You can use the entire scape for cooking. Garlic scapes can be diced and used just like you would a garlic bulb. They are delicious raw and cooked. You can grill and bake them whole as well. Perfect for BBQs! They can also be pickled and preserved for later.
