Our first batch of pasture raised chicken was processed this weekend.  We had a great crew of volunteer helpers and a trailer with top of the line equipment (mechanical scalder and plucker) help us get the job done in less than 4 hours.  We will have chicken available for members at a discounted $3.25/lb.  They will be frozen, whole chickens weighing 4-5 pounds.  They are a good size for a beer can chicken on the grill, just be sure to keep the grill a safe distance from your house so you don’t melt the siding! *wink, wink*

We will also have Fennel this week.   This pairs nicely with chicken.  Heather and I are going to try a shaved fennel salad with ours.   We’ll let you know the results next week.

Our third and final type of pea, the sugar snap,  will also be in the boxes this week.  We often find ourselves eating them raw, but we also like to saute them with some olive oil, scallions, and lemon zest for a refreshing side dish.

The garden is really loving this weather and everything is growing fast now (including the weeds). We’ll need the zucchini to put it in high gear these next two days and we should have some of that for everyone as well!

Here is the box for the first week of July:

Carrots

Lettuce Mix

Shell Peas

Sugar Snap Peas

Fennel

Scallions

Kale/Swiss Chard

Zucchini (8-Ball and or Yellow)

Have a great holiday!
